About Poligny
Poligny is a town at the foot of the first plateau of the Jura, below limestone cliffs, and it is known as the Capital of Comté: a third of the region’s production of the cheese is aged in its cellars. Comté is a hard cheese of unpasteurised cow’s milk, made by techniques developed in the Jura Mountains 1,000 years ago, and it has the highest production of all French PDO cheeses. Each wheel needs up to 600 litres of milk. Vineyards surround the town, which has independent wine producers and a cooperative. Hiking trails lead up to the Trou de la Lune cave and the Croix du Dan, and the GR 59 passes through.
